Low-Carb Seeded Crackers

Flax and Seed Crackers: Your New Favourite Snack

If you’re after a crunchy, wholesome snack that’s low in carbs, high in fibre, and packed with healthy fats, these seeded crackers will be right up your street. They’re ridiculously easy to make and far better for you than anything you’ll grab off the supermarket shelf. Plus, they’re gluten-free, grain-free, and vegan-friendly.


I love to make a batch at the weekend and store them in an airtight container. They’ll stay fresh for up to 10 days — perfect for those busy weeks when you want something nourishing on hand. Enjoy them with your favourite cheese, slathered in nut butter, or dipped into hummus or guacamole. They’re also fab just as they are for a satisfying, crunchy bite.



Ingredients (makes 12 low-carb seeded crackers)


  • 200g milled seeds and nuts (I use Yum & Yay Milled Nuts and Seeds)

  • Seasoning to taste (I like a good pinch of sea salt and cracked black pepper — you can get creative with herbs or spices or even add some parmesan)

  • 125-175ml cold water

Method of the low-carb seeded crackers

  1. Pop the milled seeds and nuts into a bowl. Add the minimum amount of water and mix thoroughly. Let it rest for a few minutes.If it feels a bit dry, add a splash more water.

  2. Form into a dough.

  3. Place the dough between two sheets of baking parchment and roll out into a rectangle about 3mm thick.

  4. Peel off the top sheet of parchment, slide the bottom sheet with the dough onto a baking tray, and score into squares using a knife or pizza cutter.

  5. Bake at 180°C for 15–20 minutes until golden. Switch off the oven and leave the crackers inside as they cool — this helps them crisp up beautifully.

  6. Once cool, snap into squares and store in an airtight container.
