Courgetti Bolognese

I think it is important to keep to traditional family favourites, especially when dieting. Food is not just about taste; it is also about satisfying the mind.

Serves 6

1 tsp coconut oil 2-3 cloves of garlic, finely chopped 1 red onion finely chopped 1 red pepper finely chopped

100g lardons or pancetta 400g beef mince

200ml beef bone stock (or red wine) 1x 400g tin chopped tomatoes 2-3 tsp tomato paste 75g mushrooms, chopped

2 tsp dried oregano

1 tsp paprika

1/2 tsp onion granules black pepper

  • Add the coconut oil to a sauté pan. Fry onion until soft and translucent.

  • Add the garlic and peppers and cook for another couple of minutes

  • Add lardons and mince and cook until brown. Add the stock or wine and cook for 2 more minutes.

  • Add chopped tinned tomatoes. Stir well. Add the mushrooms, herbs and season with black pepper. Leave to simmer very gently for 15 minutes.

  • Serve of a bed of courgette spaghetti.
