Low Carb Cajun Chicken Casserole - Slow Cooker

Turn up the heat with this lovely Cajun casserole, perfect for a cold winters night. I serve this with green vegetables and cauliflower mash - the ultimate low carb comfort food.

1 large red onion, diced

2-3 cloves of garlic, crushed

1 chilli, chopped finely

3 tsp Cajun spice

2 tsp paprika

Red pepper, sliced

500g chicken pieces (thigh, legs or breast)

2 sticks of celery, diced

1 tin of chopped tomatoes

1 tbsp. tomato puree

200-300ml hot stock (chicken or bone)

  • If your slow cooker needs to be preheated, turn it on 15 minutes before using. Refer to your manufacturer’s instructions for more information on your specific model temperatures.

  • Add all ingredients. Make sure the stock is hot when adding as this will keep the temperature.

  • Turn your slow cooker to low and cook for 6-8 hours, or if you want a faster meal, turn to high for 4-5 hours.

  • Serve with green vegetables and cauliflower mash.
